Homemade Veggie Cream Cheese

You will never enjoy the store bought stuff again. I started making this the way I start making anything. I saw it and thought

“Well, that can’t be too hard”. And this time I was right!

True to my “Almost Fine Craftsmanship” form this is not a recipe, this is a “How I did it, now get out there and experiment!!”

I consider myself lucky that I live in a delivery zone of Hungry Harvest, which is an amazing company that rescues produce that would otherwise get wasted, packing it up and delivering it to my door and I LOVE IT! I always have a variety of veggies in my fridge so this veggie cream cheese changes a little every time I make it, and it has never disappointed me!

Today was this amazing combo:

3 scallions

Handful of fresh parsley

Few leaves of spinach

4-5 bite sized pieces of broccoli

1 radish

1/2 a large carrot (peeled)

A little over a half a block of cream cheese (softened)

Dash of garlic powder

Directions:

Put the veggies in a food processor or mini chopper and pulse until minced but not pulpy. Throw in the bowl with your softened cream cheese and mix. THATS IT!! Use on breakfast breads, wraps, celery…it’s good on damn near everything!!
